Spinach and feta bake

Spinach and feta work so well together and somehow I always seem to have them
In the fridge. I often use them to make quiche and frittata, but using almost the same ingredients, I made this bake instead. It tasted delicious and a little variation on our staples made my husband very happy. My inspiration for this recipe came from here - https://www.olivetomato.com/spinach-casserole-with-feta-and-crunchy-topping/ but I worked with what I had available which meant adding a few different flavours. I also made my breadcrumbs with a combination of leftover white bread and brioche. The brioche gave the topping a deliciously buttery flavour.

Preheat oven to 180 degrees. Fry the onion, garlic and spring onions in 1 tbsp oil over a medium-low heat until soft (be careful not to burn)

Add the spinach to the pan and cook until wilted. I ended up using two pans. Just add a dash of oil to the second pan. Once wilted, drain both pans in a colander. Press the spinach to remove some of the liquid.

In a separate bowl add the breadcrumbs, crumbled feta cheese, 2 tbsp Parmesan cheese, 1 handful of breadcrumbs, oregano, nutmeg, lemon zest and salt/pepper. Mix everything and add 1 tbsp olive oil. Then add the spinach mixture. Mix everything thoroughly.

Then add the beaten eggs and combine everything evenly before transferring the mixture to a lightly oiled backing dish and sprinkling the remaining Parmesan on top.

Add 1-2 tbsp olive oil to the remaining breadcrumbs and combine until they look like the picture. Then sprinkle over the spinach mixture.

Bake in the oven for 30 minutes until the topping is golden brown. Serve with a salad.
