Ingredients

  1. 8beets
  2. 1 tablespoonDijon mustard
  3. 1 1/2 tablespoonbalsamic vinegar
  4. Juice of 1 ruby red grapefruit
  5. 6 tablespoongrape-seed oil
  6. 1shallot minced
  7. 1/4 cupfresh mint chopped
  8. 1/4 teaspoonSalt
  9. 1/4 cupcrumble blue cheese

Cooking Instructions

  1. 1

    Cut the beets and keep refrigerated until serve

  2. 2

    Dressing in small bowl combine all ingredients without the shallot and cheese or the mint and keep on side refrigerated till serving

  3. 3

    Place the beets in a shallow bowl drizzle with dressing top with shallot mint and cheese enjoy
