These are seasonal pickle . Its instant ready pickle . We can not preserved it many days , but in taste it super.
Steps

Wash & cut both vegetables. Do not peel.

Take a deep width pan add 3 cup of water & boil it. Off the flame & dip veggies for 2 min.

After 2 min transfer it into a strainer. Because of its temperature become normal & water drain out.

Now in a plate spread the louki & touri, take salt mirchi & mustard seeds powder spread on it. Mix it proper with hands. At last drop the oil on it. Again mix it with service spoon.

Now fill it into a cereamic pot
After 2 days its ready to eat. Delicious & tasty pickle. Mustard oil should be heated first & then cool it before use.
