Mutton paaya is a slow-cooked spicy and delicious curry made with lamb trotters, served hot with tandoori naan or roti.

Cooking Instructions

In a pre-heated cooker add cooking oil and heat it well.

Add the mutton trotters, and stir it well on a medium-high flame, add ginger-garlic paste and mix it well.

Once the mutton color changes add turmeric and coriander powder and mix well.

Now add red chili and Kashmiri red chili powder and mix it well.

Add bits of water at intervals, turn the flame to low, and add yogurt to it.....mix well.

Add garam masala powder and mix it again, now add fried onion paste to the mutton.

Add salt as per taste and mix it well.

Add a good amount of water for the paaya gravy and close the lid.

Pressure cook the mutton for 5 minutes on high flame and then on a low flame for 45 minutes.

Turn off the flame and leave the cooker aside for the steam to release by itself.

Add lemon juice and a pinch of garam masala powder.

Cover the cooker with the lid and leave it for a minute or two.

Dish out the paaya in a bowl, garnish with ginger Julienne, coriander leaves, green chilies and serve well.
