Add the pistachios to a blender or food processor and pulse until flour-like. Rim a tall glasse with coconut milk and ground pistachio.

Mix together the coconut milk, Malibu rum and Irish whiskey, cinnamon, sugar and vanilla extract in the glass. Add in ice. Stir well.

Place a Pistachio White Chocolate Rum Ice cream bar in the glass and serve.
