Whisk together the flour, baking powder, and salt in a medium-sized mixing bowl.

In a larger bowl, use a beater to cream the coconut oil and sugar.
Add in the egg and vanilla, and mix until well combined. - 3
Gradually add in the dry ingredients to the wet ingredients until dough forms.

Chill dough for 30 minutes.

Preheat oven to 350 F.

Roll dough into 1.5 inch balls and place on a cookie sheet, flatten with your hand or a pint glass to create a flat circle. Bake for 11 minutes.

In a medium bowl whisk together confectioners' sugar, lemon zest, and lemon juice until smooth.

Once cookies have cooled, glaze both sides of cookies in the lemon glaze. Let the glaze harden before eating.
