Ham and Edam Cheese Quesadillas

This is a Mexican recipe, but in Italy they also make something similar called "piadinas"—which is both the name of the flatbread and the dish itself: piadinas filled with ham and cheese. Slice the cheese and ham to fill the flour tortillas. Cut on one side and fill each quarter, alternating ham and cheese.

Once filled, fold the tortillas into quarters, like a handkerchief.

Heat a skillet with a little butter and cook the quesadillas until golden brown. Serve hot—they're delicious!
