  1. 2small mixed peppers, I used red and green
  2. Handfulrocket
  3. 200 gmozzarella - drained and chopped
  4. 12chopped fresh tomatoes
  5. Roll of puff pastry
  6. Olive oil
  7. Pinchsalt
  8. Beaten egg

    Preheat oven to 180 degrees. Heat a little oil in a pan. Slice the peppers and cook in the oil for about 4-5 mins until slightly soft. Add a pinch of salt Add the rocket, saving some leaves for decorating. Roll out the pastry onto a medium foil tray. Prick with a fork and glaze with egg

    Add the peppers into the pastry, add the tomatoes and chopped mozzarella. Fold over the edges and glaze with remaining egg. Pop in the oven for about 25-30 mins. Turn once during cooking. Leave to cool on a wire rack and serve with fresh rocket leaves

Tips

How to avoid a soggy pie bottom if you don't have baking beans

I'll be honest, I never use baking beans. Sometimes I blind bake my pies first sometimes I don't, depends on my mood! However this works well to avoid that soggy bottom. Simply glaze the pie before adding the filling with a beaten egg and prick with a fork. Then continue as normal 😁
