Place potatoes in a large pot, add water & 2 chicken stock cubes. set over high heat & bring to boil. Chicken stock will give the potatoes some flavour. Cook until soft (fork tender). Allow to cool, at this point you can remove the skin or, like me keep them. Dice & set aside.

In a mixing bowl, mix accordingly the yoghurt, chives, mayonnaise. Add the potatoes, season with salt & pepper. Mix well & enjoy.
