Blanch the pork ribs in a of simmering water for 20 minutes.

Lift them out with a large mesh strainer. While they are still warm, dust them all over with cornflour, patting it on help it to adhere.

Bring the pan of water of simmer and blanch the ribs for the ginger and fry for 15 seconds.

Heat the peanut oil and sesame oil in a wok over high heat. Add the ginger and fry for 45 seconds.

Add the ribs, salt, sugar, pepper and stir vigorously for 2-3 minutes, or until the ribs are lightly browned.

Serve hot, garnished with chinese celery leaves.
