Bicerin (pronounced [bitʃeˈriŋ] in Piedmontese, literally meaning 'small glass') is a historic, non-alcoholic hot drink from Turin, Italy. It evolved from the 18th-century 'bavarèisa,' a beverage served in large, rounded glasses and made with a blend of coffee, chocolate, and milk cream. The drink is believed to have originated at 'Caffè Al Bicerin,' a historic café in Turin founded in 1763 and located in Piazza della Consolata, which still closely guards the traditional recipe. While the original recipe is a secret, you can find Bicerin in many of Turin's best cafés, each with their own variation. In 2001, Bicerin was recognized as a traditional food product of Piedmont.

Pour the heavy cream into a large saucepan. Add all the ingredients except the alcohol, and whisk together while cold.

Place the saucepan over low heat and bring to a boil, stirring occasionally.

Once boiling, let it boil for 10 minutes, stirring continuously.

After 10 minutes, remove from heat and let cool. Add the alcohol, then pour into a glass bottle.

Your Bicerin is ready! Serve in glass goblets.
