Ingredients

  1. For outer covering
  2. 1and 1/2 cup rice flour
  3. 1and 1/2 cups water
  4. 1 pinchsalt
  5. 1 teaspoonclarified butter (ghee)
  6. For inner filling
  7. 2 cupsshredded fresh coconut
  8. 1 cupjaggery
  9. 1/4 teaspoonseach of cardamom and nutmeg powder
  10. 1 teaspoonghee
  11. 1 teaspoonroasted poppyseeds
  12. Few strands of saffron soaked in water

Cooking Instructions

    To prepare filling, add 1 teaspoon ghee in a fry pan on slow to medium heat. Add coconut and fry for 2 - 3 minutes.

    Add jaggery and mix well and heat till it melts. Add poppy seeds, cardamom powder & nutmeg powder. Mix well and cook for 2 - 3 minutes.

    Transfer the contents to a bowl and allow it to cool.

    For preparing covering, take 1 1/2 cup water in a saucepan and let it boil. Add pinch of salt and 1 teaspoon ghee.

    Add rice flour to the water slowly while stirring so that lumps formations are avoided. Cover and keep for 5 minutes on slow flame.

    Remove steamed rice flour in a plate. Mix thoroughly using a ghee greased bottom side of bowl

    Finally knead by hands with touches of cold water. Make smooth dough and keep covered.

    Take one small lemon size dough ball and flatten with palm and make bowl shape with fingers. Fill the dough bowl with mixture of coconut.

    Using fingers pinch the sides and bring them together gently to form dumplings or modak shape.

    About 12 to 14 of medium sized dumplings can be made with the above quantity of ingredients.. Decorate with saffron water.

    Place the dumplings in a steamer on a greased surface and steam for 10 minutes on slow flame.

    Serve the steam hot dumplings with ghee.
