Heat oil in a kadhai add onion, garlic, potatoes and saute for few seconds. Then add water and boil till potatoes are cooked.

Cool the boiled vegetables completely and grind them to a smooth paste.

In the same kadhai and the paste and water. Boil the soup on a medium flame for 10minutes. Add cornflour and mix soup well.

Add salt, black pepper, coriander leaves and boil the soup till it thickens.

For croutons, take some of the bread and fry them in oil on low heat till they are brown and crispy from both sides.

Serve Italian soup hot with croutons.
