Bell Pepper and Potato Stir-fry with Whole Grain Mustard

I got some cheap bell peppers at the supermarket. I like eating them raw, but my kids are not so keen on them, so I came up with this quick stir-fry so that my kids could enjoy them, too.
The seasoning amounts listed are only a guide. Adjust them to your liking.

Peel and julienne the potato. Let it soak for over 5 minutes, then drain in a sieve.

Slice the bell peppers into 5 mm widths.

Heat some olive oil in a frying pan and stir-fry the potato over medium heat.

When the potato becomes transparent, add the bell peppers, and stir-fry for 1-2 minutes. Season with the salt and mustard, and remove from heat.

Transfer to a serving plate. Top with Italian parsley (not listed) if you have any.
