Peel and cut the onions into wedges. Rinse the pork ribs, then add them to a pot with water, salt, fish sauce, and onions. Simmer for 60 minutes until the ribs are tender.

Meanwhile, wash the daikon and carrots. You can peel them or leave the skins on. Cut into chunks or bite-sized pieces.

After the ribs have cooked for 30 minutes, add the daikon and carrots to the pot.

Taste and adjust with more fish sauce if needed. Continue cooking for another 30 minutes, or until everything is tender to your liking. Turn off the heat and enjoy!
