Ingredients

15 minutes
5-6 servings
  1. 4-5 cubesfrozen spinach
  2. 1/2 cupraw almonds with skin (about 50 grams)
  3. 1/4 cupgrated Parmesan cheese (about 30 grams)
  4. 2 tablespoonsextra virgin olive oil (about 25 grams)
  5. Salt and pepper to taste

Steps

  1. 1

    Cook the frozen spinach in a small amount of lightly salted water.

    Roughly chop the almonds in a food processor.

    Combine all the ingredients in a tall container for an immersion blender (including the chopped almonds) except for the oil, which you will drizzle in while blending until you get a smooth sauce. If necessary, add the spinach cooking water. Adjust salt and pepper. The pesto is ready.

    Store in the fridge well covered and consume within 2-3 days.
