This recipe is seriously simple and you can alter it to suit your tastes. If making in oven, preheat oven at 180°C for 10 minutes. Grease a baking tray with oil. Toss the prepared pizza into the oven and bake to crispy, cheesy, saucy perfection. Ie. for 8 to 10 minutes at 180°C.

This recipe is seriously simple and you can alter it to suit your tastes. If making in oven, preheat oven at 180°C for 10 minutes. Grease a baking tray with oil. Toss the prepared pizza into the oven and bake to crispy, cheesy, saucy perfection. Ie. for 8 to 10 minutes at 180°C.

Firstly, In a small bowl, add 2 teaspoons each of Pizza Toppings, Red Chilli Sauce, Tomato Ketchup and Veg Mayonnaise. Mix well and set aside.

Grate the cheese cubes in a bowl and keep it in freezer till required ie. Few minutes.

Wash, cut and keep all the vegetables ready. Slightly roast or steam the sweet corn.

Now take a medium sized pizza base and spread the sauce evenly to cover the entire base. Add grated cheese over the sauce.

Next add the vegetables, starting with onions. Next place the tomatoes and green bell pepper.

Then yellow bell pepper, red bell pepper and sweet corn. At this stage, you can add some salt and black pepper powder to taste.

Top it again with grated cheese, oregano and red chilli flakes.

Lastly, add the mexican seasoning.

Heat a dosa pan. Add some oil and butter to it. Place the prepared pizza on the pan. Cover and cook on low flame for exactly 8 minutes.

When done, remove on a serving plate. Cut into desired shape and serve it immediately.

Cheesy Mexican Veg Pizza is ready. Enjoy it immediately with tomato ketchup or red chilli sauce.
