Chorrillana, Jon Style

This dish is very popular throughout Chile. It consists of a plate served with French fries, caramelized onions, sautéed beef, and sometimes scrambled eggs, fried eggs, or sausage.
I prefer to cook the beef on a griddle until just done, so it stays tender and juicy.
I made mine with French fries, caramelized onions, sliced chorizo, and beef cooked on the griddle and then cut into strips. I finished it off with a fried egg on top and a drizzle of pebre. I made a video of the whole process. Jon Style.

Steps

Make the pebre. (See the link to my recipe)

Heat the oil and fry the potatoes. Place them on a plate lined with paper towels. While the potatoes are frying, caramelize the onion to your liking in a skillet. Season with a little salt.

Preheat an oven-safe plate and place the fries on it to keep them warm.
Season the steak and cook it on a very hot griddle to your preferred doneness. Cook the chorizo on the griddle as well.
Slice the chorizo and mix it with the caramelized onion. - 4
Fry an egg in a small skillet.
Remove the plate with the fries from the oven and place the onion and sliced chorizo in the center.
Cut the steak into strips and place on top of the onion.
Add the fried egg on top and drizzle with pebre if desired.
