A taco is a traditional Mexican dish consisting of a small size corn or wheat tortilla topped with a filling of refried beans or meat and folded around the filling.

A taco is a traditional Mexican dish consisting of a small size corn or wheat tortilla topped with a filling of refried beans or meat and folded around the filling.
Steps

Mix the maize flour, maida and salt together in a deep bowl. Add oil and little warm water at a time and knead into a stiff dough.

Divide the Taco dough into 4 equal portions and roll out a portion into a 4 inch diameter circle by dusting in maida while rolling.

Once rolled, prick the taco dough with a fork or knife.

Cook in pan for few seconds.

Brush oil on tacos.

Next put the corn taco on the baking grill rack.

Bake for 7 to 10 minutes until you see the taco are crispy and lightly browned.

Rinse kidney beans with water and then soak them in enough water overnight or for 8 to 9 hours.

Next day rinse the kidney beans very well, then add them in pressure cooker, add salt and water and pressure cook till it cooked properly.

Heat 1 tablespoon olive oil in a pan and add finely chopped garlic.

Then add finely chopped onions and sauté on a medium flame till they become translucent.

Then add the cooked kidney beans.

Add crushed black pepper, dried oregano and red chilli powder.

When the refried beans have thickened to the desired consistency then switch off the flame.

Fill the refried beans in taco shell and top with chopped coriander and tomato.

Spread mayonnaise over the filling and serve.
