Ingredients

20 minutes
4 people
  • 1 packnoodles
  • 3-4garlic cloves crushed
  • 1/4 cupSpring onions
    Veg Noodles Spring rolls
  • 1/4 cupCorn
  • 1/4 cupCapsicum
  • 1/4 cuppurple cabbage
  • 1/2 cupSoya chunks (any form of protein)
  • 1 teaspoonSoya sauce or fish sauce
  • 1 TablespoonSweet Chilli Sauce
  • Salt to taste
  • 1 tablespoonPeanuts
  • 1 teaspoonoil
  • Water for boiling noodles

Steps

20 minutes
  1. 1

    Heat water, add salt and noodles.
    Cook till Al den te.
    Strain and keep aside. Preserve some boiled water.
    Soak the soya chunks in some water for 5 minutes.

  2. 2

    Heat oil in a pan. Add garlic, onions and saute well. Add all the vegetables and soya chunks(squeezed all the water).
    Add sauce, salt and mix well
    Add the noodles and saute for a minute.
    Garnish with peanuts and spring onions.

    If you are using tofu/paneer or chicken or Soya chunks, just make sure to saute first for 2-3 minutes seperately and then add to the noodles.
