Lime and Lemony Lemon Rice. This is what I call it. A very popular crunchy, flavourful and sour South Indian Rice recipe that is loved by many. It can be made with both raw and cooked Rice. The Peanuts add crunch to this dish and the Lemon juice gives it a sour taste. This one can be used as a tiffin recipe too. Though it tastes best on it's own, it can be served with pickle or raita or any side dish of one's choice. Cashews and Almonds can also be added to give it richness. This aromatic Rice dish is therefore the first choice of many when there is some leftover plain cooked Rice at home.
This is a lovely Breakfast dish from the Southern parts of India. And not only for Breakfast, it can be made at anytime one wishes to have this delicious and flavourful meal. It's a kinda comfort meal for me. I just love it so much. Do give it a try people. Iam sure you will love it too.

Steps

Prepare the plain Rice as per your convenience and set aside until use.

In a cooking pan, heat Ghee and add the Mustard Seeds at first. Keep the flame on a low. After they crackle, add the Curry Leaves and the Dry Red Chillies.

Add Asafoetida and both the Lentils now. Let the colour change to a light golden and then add the Turmeric powder and the chopped Green Chillies as well. Now add the Peanuts. Fry them for a while until crisp and done.

Now add the Lemon juice and mix. And finally the cooked or leftover Rice and give it all a good mix. That's it. Garnish with a few chopped Coriander Leaves also if desired. Cover and simmer for 8 to 10 minutes.

Serve it alongside some Poppadoms and Pickle. Enjoy!
