Ingredients

30 minutes
4 people
  1. 1 packetpad Thai rice noodles
  2. 250 gmsdeveined shrimp
  3. 2dried lemon grass
  4. 1small yellow bell pepper
  5. 1small green bell pepper
  6. 1small red bell pepper
  7. 1medium onion
  8. 2-3garlic cloves
  9. 1small carrot
  10. 2 sprigspring onions
  11. 2eggs
  12. 250 gmdiced chicken
  13. 2 cuppad Thai sauce
  14. 5-6roasted peanuts

Cooking Instructions

    Fry the shrimp marinated with salt and keep aside. Soak the rice noodles in cold water for softening before use

    Take 2 tbsp vegetable oil and sauté minced garlic. Add onions and lemon grass and fry. Add all vegetables cut in julienne and give a nice stir.

    Add 2 whisked eggs in a side and scramble it. Mix well and add the chicken cubes and fry.

    Add the fried prawns and mix well.

    Add cut spring onions and mix well.

    Add the softened rice noodles and give a nice mix

    Add the pad Thai sauce and mix very well so that the noodles and veggies and chicken, shrimp, eggs get coated well with the sauce. Serve hot with some crushed roasted peanuts and cut spring onions. I love the gondhoraj lemon and believe me just squeeze some lemon and you get the real flavour.check out my pad Thai sauce recipe
