As cashew nuts are a little expensive, I used ground cashew nuts to make nut cheese, and it turned out great.

Ground cashew nuts are quite convenient if you keep it in stock, as they can be used for baked sweets, curries and soups.
There is also a recipe for maple cashew nut cream. Recipe by Mikikimiki

Ingredients

  • 1 cupGround cashew nuts
  • 4 tbspBrown rice rejuvelac
  • 1/2 tspSalt

Steps

  1. 1

    Add the ground cashew nut powder into the rejuvelac and mix well. Cover loosely with cling film and leave it at room temperature for 6-10 hours.

  2. 2

    When it starts to smell like cheese, put it in the fridge and leave overnight.

  3. 3

    Season with salt and it's done. It's also great if you add black pepper or basil to taste.

  4. 4

    There is also sliced cheese made with sake lees.
