QUINOA is a superfood and a great alternative for carbohydrate.Quinoa is packed with protein,fiber and various vitamins and minerals.1 cup of Quinoa is equal to 8 grams of protein.
Beetroot is a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C.
Combining quinoa and beetroot and a few more ingredients like chopped apricots, pesto, honey and feta cheese with bell pepper curls makes for a nutritious and colourful salad.

Wash and soak quinoa for 15 min and then cook the quinoa. Then add the cooked quinoa in a bowl. Squeeze lemon.

Add diced apricots, feta cheese, pesto, honey,diced beetroot and blend.

Garnish the salad with diced beetroot,feta cheese and bell pepper curls.Serve with beetroot coulis and chopped apricots. Colourful quinoa and beetroot salad is ready to eat.
