Begun Bhaja are crispy and tender eggplant fries that are delicious to enjoy as a snack, side or appetizer. Thin slices of brinjals are dusted with seasonings ,gram and rice flour, then pan fried in mustard oil and served as a side dish with dal rice or khichdi or roti.

Wash the brinjal and chop off its stalk. Cut the vegetable along the cross-section into discs

In a mixing bowl, combine the turmeric powder, salt, sugar, rice flour and gram flour. Add the brinjal slices to the bowl and coat them with the spices.

The salt and sugar will draw out the water from the brinjal slices and soften them up. The moisture generated will also help all the flavours mingle nicely.

Heat mustard oil in a skillet till it starts smoking lightly. Lower the marinated brinjal slices into the oil one by one and fry them on each side, for about 3 minutes, till they are golden. I use a fork just to make holes so that it gets cooked from inside as I avoid deep fry. Serve hot to maintain the crispiness as a side dish,
