It’s my favourite season of them all!! I love it when the autumn squashes come out and I like to try a few new ones each year. Today is (I think) acorn squash. So delicious!

It’s my favourite season of them all!! I love it when the autumn squashes come out and I like to try a few new ones each year. Today is (I think) acorn squash. So delicious!

Scrub the squash to remove any soil. Cut it in half from tip to base. Scoop out the seeds, you can roast these separately.

Cut each half into 4 wedges and put them in your baking dish. Drizzle with olive oil.

Chop the herbs and scatter them over the top. Then season generously with salt, garlic granules and pepper.

Take the skin off the chorizo and dice it. Scatter this over the squash too, make sure each wedge has some chorizo on it.

Bake at 190 C for 1 - 1.5 hrs until tender. Check it after an hour and drizzle with more oil if it looks a little dry.
