As the market is overflowing now with fresh veggies, I decided to go for colorful nutrients rich veggies, fresh button mushrooms, and brown rice to make an easy and nutritious lunch for me and my family. Although my son is a die-hard non-vegetarian, he never minds having nutritious veg fried rice. Here, I made a twist by adding biryani masala to make the fried rice extra delicious.

As the market is overflowing now with fresh veggies, I decided to go for colorful nutrients rich veggies, fresh button mushrooms, and brown rice to make an easy and nutritious lunch for me and my family. Although my son is a die-hard non-vegetarian, he never minds having nutritious veg fried rice. Here, I made a twist by adding biryani masala to make the fried rice extra delicious.

Heat oil in a deep pan, add cumin and allow to splutter. Further add, onion, garlic and green chillies. Saute till onions are translucent.

Then mix all the veggies, mushrooms, biryani masala and saute on low to medium heat.

Now add the cooked brown rice and purple cabbage. Saute with a light hand, cover, and cook for 1 minute on low heat.

Serve hot and delicious spring-fresh fried rice to your family for lunch.
