Ingredients

  • 4boiled eggs, fried
  • 1medium onion chopped
  • 1green chilli chopped
  • 2 Tbspginger-garlic paste
  • 2tomatoes chopped
  • 1/4 cupfresh curd
  • 1/2 tspred chilli powder
  • 1.5 tspcoriander powder
  • 1/3 tspcumin powder
  • 1/3 tspgaram masala powder
  • 1 tspcrushed dry Kasoori methi
  • 1/4 tspturmeric powder
  • As per tasteSalt
  • 1 cupmore water for gravy
  • 2 Tbspmustard oil

Steps

    Heat oil in a deep pan. Add and fry onion and green chilli till onions are golden brown.

    Now add ginger -garlic paste, tomatoes, coriander, cumin, red chilli powder. Saute till tomatoes are soft, mushy and masala paste come together.

    Then slow down the flame and add curd and saute slowly till the curd mixes well with masala paste.

    Add kasoori methi and garam masala and saute for a minute. Add a cup of water and allow to boil. Add the eggs and boil for 30 seconds more.

    Serve the colourful egg curry with rice/roti.
