Homemade Roti / Chapati / Phulka/ Indian Flat Bread is the simplest and easiest bread to make and is nutritious and healthy. It's origin is from India and it's subcontinents.
Its just Whole Wheat Flour or Multi grain Flour and water, you can add salt too but it's totally optional.
No All-purpose Flour or Maida !
The recipe varies a bit in every household and regions and is made by different kinds of flour too available locally and called by different names too.
It's high in fibres, protein, carbs and other essential nutrients, which keeps you satiated for a longer period of time and reduces the overall calorie intake, this makes it an excellent choice for weight loss diets. It lowers our blood cholesterol levels, prevents constipation and helps keep digestive system healthy.
Note : The absorption of water depends on the flour as different regions and seasons flour absorbs water in different ratio ( +/-).

Ingredients

  1. 400 gmsWhole Wheat Flour or Multigrain Flour
  2. 300 mlor as needed Water at Lukewarm or room temperature
  3. 1 pinchSalt (optional)

    Add salt to the flour and mix if you are adding salt to the flour. Then add little water at a time and knead it into a soft dough. Knead the dough until smooth. Cling wrap or cover it with a damp kitchen towel (wash it in running water and wring the water out) and let it rest for half an hour at least.

    Knead for a minute again and divide the dough into 16 balls and roll out with a rolling pin (Belan) on a rolling board (Chakla) to the required thickness for each roti. Dip it in dry flour before you start rolling it or sprinkle dry flour while rolling to avoid from sticking, don't use too much dry flour otherwise it will start burning on the tawa.
    You can make rounds of thin dough by slapping (Chapat) the dough between the wetted palm of the hand too and hence will be called CHAPATI ! ☺️

    Place the rolled round dough on a preheated tawa/ skillet and bake both sides until golden brown spots appear.

  4. 4

    To puff up the roti:
    1. Gently press with a cotton cloth on the edges, flip and do it on other side too.
    2. Another way to puff up is to keep it on direct flame for 3-4 seconds, when one side is cooked, remove the roti and directly flip on the flame. Now it is called PHULKA.
    Remove from flame and serve it hot with curries or milk etc or store in a container lined with damp cotton cloth to keep the roti/ chapati/ Phulka soft.
