Steps
- 1
For Marinating Chicken:-
Cut the chicken into sliced at least 2 inch long.
Combine the marinate ingredients in a bowl. Add the chicken and rub the marinade mixture all over each chicken piece. Place in the refrigerator. You can marinate for minimum 30 mins to 24 hours. I kept marinate Chicken in airtight container in refrigerator for overnight. - 2
For preparing Yogurt Sauce:-
In a bowl, combine the ingredients for making Yogurt Sauce and mix. Cover and keep aside in the refrigerator. It remains fresh for 2-3 days, if kept inside refrigerator. - 3
For preparing Kuboos:-
In a bowl, combine the yeast, sugar and hot water and set it aside for 10 minutes until foam rises.
Now add maida flour, wheat flour and salt and knead soft dough. Add warm water or warm milk if necessary for kneading. Dough should be smooth and not stiff. Add oil and mix. Cover and keep aside for 1 to 2 hours. - 4
After 2 hour, knead and divide dough into 4 equal balls. Take a ball, flatten it and roll them on a flat surface with a rolling pin into a chapati.
- 5
Then cook this pita bread on a hot tawa, just like chapattis. Cook till fluffy, then remove it on the plate. Kuboos (Arabic Pita bread) is ready.
- 6
Now take out marinated Chicken:-
You can grill, deep fry or shallow fry the marinate chicken. Here, I shallow fried it in a pan on medium-high flame.
In pan, add 1 to 2 tbsp olive oil and fried the marinated chicken until golden-brown. Cook till chicken is cooked. - 7
To serve:-
Cut the fried chicken into thin strips and keep aside.
Apply Yogurt sauce on Kuboos.
You can also apply Tandoori mayonnaise instead of yogurt sauce (optional). - 8
Then place some fried chicken strips, bit of chopped cabbage and chopped tomato on top.
Then again add some sauce on the top. - 9
Roll up and enjoy!
