Ingredients

4-6 servings
  1. 2-3Cubed Chicken Breasts
  2. 2 TbspButter
  3. 2 TbspOlive Oil
  4. 1Chopped Onion
  5. 1-3Garlic Cloves (depending on how garlicky you want the curry)
  6. 320 gMushrooms (any type - I used button)
  7. 1 CanCoconut Milk
  8. 3 TbspRed Curry Paste
  9. Salt & Pepper (to taste)

Steps

  1. 1

    Warm butter and olive oil to medium-high heat in a large skillet. Then add chicken and cook for 5 minutes or until lightly browned.

  2. 2

    Add mushrooms, onion and garlic and cook for another 5 minutes.

  3. 3

    Pour in coconut milk and stir in red curry paste. Reduce heat to medium-low and let it simmer for 10-15 minutes, or until the sauce has thickened to your liking.

  4. 4

    Season with salt and pepper to taste. Serve over rice and garnish with chopped parsley (optional).
