Ingredients

  1. 500 gground beef
  2. 230 gmirepoix
  3. 600 gred potato
  4. 20 gparsley and thyme
  5. 2 cubesbeef bouillon
  6. 1 tbspsoy sauce
  7. 4 tbspall-purpose flour
  8. 2 clovesgarlic
  9. 2 tbspbutter
  10. Oil
  11. Salt and pepper

    Preheat oven to 450F and wash all produce.

    Cut potatoes to 1/2" pieces, and toss with 1 tbsp oil on a parchment lined baking sheet. Season with salt and pepper and roast in the middle of the oven for 25-30 minutes.

    Roughly chop parsley and strip 1tbsp thyme. Peel then grate garlic. Heat a large pot over medium-high heat. When hot, add 2 tsp oil, and beef. Cook, stirring to break up, until browned. Using a slotted spoon, transfer beef to a large bowl. Discard any remaining beef fat.

    Reduce heat to medium, add butter, mirepoix, thyme, and garlic. Cook, stirring occasionally, until mirepoix softens slightly, 3-4 minutes. Add beef and any juices from the bowl. Sprinkle with flour. Cook, stirring often, until flour coats veggies and beef, 1-2 mins.

    Add bouillon, 1 tbsp soy sauce, 3 cups water to the pot. Season with salt and pepper, bring to a boil. Once boiling, reduce heat to medium-low. Simmer, stirring often, until stew thickens and veggies cook through, 10-12 mins.

    Add roasted potatoes, serve with parsley as garnish.
