Pesto chicken soup instant pot ip

Ingredients

4-5 servings
  1. 2 TBLSolive oil
  2. 1med white onion chopped
  3. 2 TBLSminced garlic
  4. 3med-large carrots chopped
  5. 3celery stalks with leaves chopped
  6. 1 poundchicken breast cut into bite sized pieces
  7. 4 cupschicken broth
  8. 3/4 cupmy pesto found here:
  9. I TSP kosher salt
  10. Fresh chopped basil

Cooking Instructions

    Turn on instant pot to saute high/more setting.

  2. 2

    When pot says hot add in olive oil and onion. Cook stirring occasionally for 3 minutes.

    Add in garlic, carrots, celery and cook for 3 more minutes, again stirring occasionally.

  4. 4

    Add in chicken and cook till the chicken turns white, again stirring occasionally.

  5. 5

    Add in chicken broth and scrape the bottom of the pot remove any stuck on bits.

  6. 6

    Stir in pesto and salt.

  7. 7

    Seal instant pot and cook on high pressure for 10 minutes with a 5 minute natural release.

    Release rest of the pressure. Remove lid. (Careful of the steam).

  9. 9

    Ladle into bowls top with the fresh basil.

  10. 10

    Enjoy!
