First, wash the lamb chops and pat them dry with paper towels. Season both sides with lemon pepper, meat seasoning, wild thyme, and herb salt. In a skillet or on a grill, add butter and sear the chops for 3 minutes on each side—they cook quickly because they're small.

To make the sauce, combine parsley, walnuts (the main ingredient), salt, black pepper, lemon juice, and plenty of olive oil. Mix well and place in a serving dish.

For the mashed potatoes, boil the potato cubes until tender. When done, add 1 tablespoon butter, salt, and white pepper, then mash. Add a little heavy cream and mix until smooth.

To serve, place the mashed potatoes on a plate, add the lamb chops, and serve the sauce in a small separate bowl. Garnish with chopped parsley and enjoy. It's easy, delicious, and quick—if you ordered it at a restaurant, it would cost a fortune!
