Cooking Instructions

Firstly, in a pan take ragi flour and rice flour. Roast on low flame for 5 minutes or until flour turns aromatic. Transfer the roasted flour to the large bowl and keep aside.

In a vessel take water, oil and salt. Get the water to boil vigorously. Pour the boiling water over the flour and mix with a spoon.

Make a moist flour absorbing all the water. Rest for 3 minutes or until the dough cools slightly. Grease hands with oil and knead for 2 minutes.

A non-sticky dough will be formed. Now take small holed noodle mould and fix to the chakli maker. Grease the chakli maker with some oil. this prevents dough from sticking to mould.

Now make a cylindrical shape out of dough and place the dough inside the maker. Keep covered the rest dough else they will turn hard.

Tighten the lid and start preparing idiyappam on the greased plate by pressing in a circular motion. Further, steam it for 15 minutes.

Finally, serve ragi idiyappam.

My simple rustic lunch today... Ragi and brown rice mudde with moolangi sambar 😄😄 #onmyplateRagi mudde/ finger Millet flour balls are a staple diet of kannadigas.. it's commonly known as farmer's food, as ragi keeps the stomach full for longer without giving a heavy and lethargic feeling.. it cools your body by bringing down the body heat and is a super nutritious Millet! Needless to say it is a healthy flour, rich sauce of calcium, protein and iron.. It is usually had with a watery broth made out of greens mostly.. called bas-saaru..or massoppu saaru which is basically the broth got from cooking the greens and lentils. Today I paired it with my all time favourite moolangi sambar (radish curry). I have said it before also, I love this vegetable! I feel it's very underrated!The twist in the mudde today is, I've added brown rice.. just as a trial.. Mudde is usually done purely out of ragi flour.. you need a good practice to get the proportions and handling right when doing this.. as it can end up becoming one hard lump or a watery mess!! Believe me, I've been there, done that and thrown it away too 😝. This is one drink which i made recently and i am in love with it. This is great for breakfast during hot summer days, since having hot ragi malt is impossible these days. I made this chocolate version for me and my lil one, a sathumaavu version for hubby. He loved it so much. You will never find ragi added in this drink unless mentioned.
