Quick & Easy Homemade chicken soup

My cold and rainy day comfort food. You can make a large pot and eat it as leftovers. This recipe makes ALOT!! Cut it down if you don’t want as much.

I will add my recipe for homemade noodles to my profile recipes to use instead of the packaged noodles if you have the time to make them.

If you like Caldo De Pollo (Mexican chicken soup), you can add potato chunks (boil the potatoes to almost done before adding to the soup mixture with the chicken, veggies, and broths), add white rice at this time as well. Served with tortillas.
Add a little spice to give it some spicy flavor.

Ingredients

6-10 servings
  1. 1 tbspbutter
  2. 1/2 cupchopped onion
  3. 1/2 cupchopped celery
  4. 4 (14.5 oz)can) chicken broth
  5. 1 (14.5 oz)can) vegetable broth (optional)
  6. 8-10 stripschicken or 2-4 breasts (boiled, shredded)
  7. 1 packageegg noodles (extra wide)
  8. 1 cupsliced carrots (pretty thin)
  9. Chicken bouillon cubes (1-4 cubes as needed)
  10. DashBasil
  11. Dashoregano
  12. Dashsalt
  13. Dashpepper

Cooking Instructions

    Boil chicken until cooked through. Keep the water you boiled it in to side. Shred or cup the cooked chicken, set aside to add to soup later.

    In a large pot, over medium heat, melt butter. Add onion & celery to melted butter and sauté for about 5 min, until tender.

    Then add chicken broth, optional vegetable broth, noodles, cooked chicken pieces, carrots, and dash of basil, oregano, salt, pepper for taste.

    Add the water from boiling the chicken (as much as you would like) the more you add, the more you’ll have, but add bullion cubes to add the broth flavor.
    About 1 cube per 2 cups of water. I toss in about 4 cubes, but you can add as many or little as you’d like.

    Bring combination to a boil, then reduce heat to low, cover and simmer for 20 minutes.

    As long as the carrots and noodles are cooked through.
    TIP; I use this (see picture) to ensure carrots are sliced thin enough to be able to be cooked thoroughly for soup.
