Steps
- 1
Soak Chickpeas for 6-8 hours or overnight.
- 2
Boil tea leaves with a glass of water.
Seave the tea water. - 3
In a pressure cooker add soaked chickpeas, tea water, 2 bay leaves and 1/2tsp salt. Cover and cook until 6-7 whistles or until the chicken becomes soft.
* Strain the chole/chickpeas and reserve the stock for later. - 4
Meanwhile, in a grinding jar add remaining onion, ginger, garlic, green cardamom, black cardamom, pepper, chilli and cinnamon stick. Grind till smooth paste. Keep it ready.
- 5
Further, heat oil in a kadhai, splattered Cummin, chilli, asafoetida and bay leave.
Now add 3/4cup chopped onions and cook till they become golden brown. - 6
Add in prepared paste, stir and cook for 2-3 minutes.
Now add all the dry masala/spice powders and salt.
Stir the spice powders and saute for a minute. - 7
Now add the chole and saute for 5-6 minutes.
Add slit green chilies and fry for a minute. Yes the chole is spicy.
Further, add the strained stock to the chole. - 8
Keep the flame on medium and simmer till the gravy thickens a bit. You don’t want a watery chole. Add chopped coriander leaves and julienned ginger.
Adjust the spices and seasonings as per your taste preferences. - 9
Serve hot with Puri, onion and lime wedges by the side.
