Ingredients

  1. 1 cupdry Chickpeas
  2. 1 tbsptea leaves or 2 tea bag
  3. 1 tspsalt or to taste
  4. 3 tbspmustard oil
  5. 1/2 tspCummin seeds
  6. 3bay leaves
  7. 1/8 tspasafoetida
  8. 3-4chilli
  9. 1 cupchopped onion (red onion goes well in this recipe)
  10. 6-7garlic
  11. 1 inchginger
  12. 1brown cardamom (badi elaichi)
  13. 2green cardamom
  14. 1 inchcinnamon stick
  15. 2cloves
  16. 7-8black pepper
  17. 1/2 tspturmeric powder
  18. 1 tspcoriander powder
  19. 1 tbspchola masala
  20. 1 tbspanardana powder
  21. 1 tspdry mango powder (amchur)
  22. 1 tspkasuri meathi
  23. 2green chilli slit
  24. 7-8ginger slit
  25. 2 tbspchopped coriander leaves

Steps

  1. 1

    Soak Chickpeas for 6-8 hours or overnight.

    Boil tea leaves with a glass of water.
    Seave the tea water.

    In a pressure cooker add soaked chickpeas, tea water, 2 bay leaves and 1/2tsp salt. Cover and cook until 6-7 whistles or until the chicken becomes soft.
    * Strain the chole/chickpeas and reserve the stock for later.

    Meanwhile, in a grinding jar add remaining onion, ginger, garlic, green cardamom, black cardamom, pepper, chilli and cinnamon stick. Grind till smooth paste. Keep it ready.

    Further, heat oil in a kadhai, splattered Cummin, chilli, asafoetida and bay leave.
    Now add 3/4cup chopped onions and cook till they become golden brown.

    Add in prepared paste, stir and cook for 2-3 minutes.
    Now add all the dry masala/spice powders and salt.
    Stir the spice powders and saute for a minute.

    Now add the chole and saute for 5-6 minutes.
    Add slit green chilies and fry for a minute. Yes the chole is spicy.
    Further, add the strained stock to the chole.

    Keep the flame on medium and simmer till the gravy thickens a bit. You don’t want a watery chole. Add chopped coriander leaves and julienned ginger.
    Adjust the spices and seasonings as per your taste preferences.

    Serve hot with Puri, onion and lime wedges by the side.
