I prepared the simple rice platter for 'Mahalaya' celebration. These prepared platter is without onion and garlic. The taste is totally different and flavourful.
Steps

Mix soaked dal, chopped papaya and potatoes in a pressure cooker. Add water turmeric and salt. Cook for 1 whistle. Allow to release pressure, naturally.

Heat a wider pan with ghee. Add ponch phutan and let them crackle. Add green chillies.

Mix grated ginger and chopped tomatoes.

When tomatoes soften, add coriander and cumin powder and garam masala powder. Cook for till aromatic, on low heat.

Add the boiled dal, papya and potatoes. Cover and bring to boil. The Papaya, moong dal is ready to serve with Ghee rice.

To make raita, grate finely cucumber and carrot. Mix with curd, add seasoning, roasted cumin powder and chilli flakes. Serve chilled with rice.
