Navratri Upvas Sabudana Vada

Take a bowl and add 1 cup sago/ Sabudana. Wash it once with cold water and soak it overnight. Once it's done, drain the excess water and transfer the sago/ Sabudana in a bowl.

Take another bowl and add 2 boiled potatoes. Peel and mash them well using your hands.

Meanwhile, Roast 1/2 cup of groundnuts in a pan over medium flame. Once done, transfer the nuts to a mixer grinder and grind them into a coarse powder

Mix the overnight soaked sago/ Sabudana, mashed potatoes and crushed groundnut powder together in mixing bowl.

Add 1-2 green chillies and salt as required

Take portions from the mixture and form vadas with oiled palms. Make sure you cover all the edges of the Vada otherwise it may break while frying.

Heat oil in a pan over a low flame.

Fry them on medium heat until they're golden brown and crisp

Serve them hot with curd or peanut chutney
