I had some frozen commercial karaage bento, but I decided I wanted a fried dish that was lighter, so I added ginger and tried making tatsuta-age.

Use as much ginger as you like.
It's delicious with a little bit of mayonnaise (sort of like a hamburger topping). Recipe by Hokkori-no

Ingredients

  1. 1Chicken breast
  2. 1/2 tbsp・Sake
  3. 1/2 tsp・Sugar
  4. 1/8 tsp・Salt
  5. 1 tbspSoy sauce
  6. 1 tbspMirin
  7. 1 tspSqueezed ginger juice (or grated ginger)
  8. 1Katakuriko
  9. 1Frying oil

Steps

  1. 1

    Cut the chicken breast into bite-sized pieces and add to a bowl. Sprinkle sake, sugar, and salt and massage into the chicken to soften.

    Add the soy sauce, mirin, and ginger juice to the chicken from Step 1 and let it sit for a while.

    Cover the chicken pieces from Step 2 in katakuriko and fry in oil.

  4. 4

    Once the chicken has cooled, place in a freeze-store bag and freeze.

    When using the chicken in bento lunch boxes, microwave it first before packing.
