Ingredients

4 servings
  1. 1 mediumpineapple; pared, cored, & cut into tidbits. (canned tidbits may be substituted- drain well)
  2. 1/4 cupmatchsticked carrot
  3. 2apricots, pitted & sliced
  4. 1 cupgreen grapes, seeded & halved
  5. 1/4 cupgrated unsweetened coconut. (Both fresh or dried will work)
  6. 1/2 tspcayenne pepper (optional)

    Place all items: pineapple, carrot, coconut, apricot, grapes, & cayenne into a smaller mixing bowl.

  2. 2

    Gently toss ingredients together. Allow to sit & chill for at least 20 or so minutes, especially if you used dryed coconut, before serving.
