This recipe is a blend of several I found online, adapted to fit my gluten-free, dairy-free, and refined sugar-free diet. The plant-based milk and whole cane sugar give it a unique flavor you won’t find in traditional cakes.

Use a greased 8-inch round cake pan (about 1.5 inches high). For easier removal, you can line the bottom with a round of parchment paper. Preheat the oven to 350°F (static heat).

Peel, core, and slice the apples into thin slices (about 1/12 inch thick).

In a large bowl, mix together all the dry ingredients. In a separate bowl, whisk together all the wet ingredients. Pour the wet mixture into the dry ingredients and whisk until smooth, avoiding lumps.

Arrange the apple slices randomly in the greased pan. Pour the batter over the apples. Sprinkle the top with the remaining whole cane sugar.

Bake for 35–45 minutes at 350°F. Let cool for 30 minutes before removing from the pan. Enjoy warm or cold.
