Ingredients

Serves 6–8 servings
  1. 1 1/3-1 1/2 poundsorganic apples (600–700 grams)
  2. 3large eggs (about 5.3 oz / 150 grams)
  3. 3/4 cupplant-based milk (such as rice, oat, or almond) (200 grams)
  4. 3/4 cupbrown rice flour (100 grams)
  5. 2 1/2 tablespoonscornstarch (20 grams)
  6. 1/4 cupwhole cane sugar, plus 1 tablespoon for topping (50 grams + 15 grams)
  7. 2 tablespoonsgrapeseed oil (25 grams)
  8. 2 teaspoonsgluten-free baking powder (10 grams)
  9. 1 pinchsalt
  10. 1 pinchground vanilla bean

  1. 1

    Use a greased 8-inch round cake pan (about 1.5 inches high). For easier removal, you can line the bottom with a round of parchment paper. Preheat the oven to 350°F (static heat).

    Peel, core, and slice the apples into thin slices (about 1/12 inch thick).

  3. 3

    In a large bowl, mix together all the dry ingredients. In a separate bowl, whisk together all the wet ingredients. Pour the wet mixture into the dry ingredients and whisk until smooth, avoiding lumps.

  4. 4

    Arrange the apple slices randomly in the greased pan. Pour the batter over the apples. Sprinkle the top with the remaining whole cane sugar.

  5. 5

    Bake for 35–45 minutes at 350°F. Let cool for 30 minutes before removing from the pan. Enjoy warm or cold.
