Ingredients

45-55 mins.
3-4 Servings
  • 1 CupChire/Flattened Rice/Poha: Gently Fried & Well Strained
  • 1 LFresh Milk: Boiled and Reduced to half of it
  • 3/4-1 CupNestle Milkmaid
  • 1/4 CupGranulated Sugar: If you want it more sweetened
  • as required Dry Fruits: Finely Chopped
  • 3-4. Green Cardamoms: Split
  • 1Bay Leaf: Optional
  • 1 tspRose Water (Edible)
  • 1Pinch. Saffron: Optional (Garnish)
  • As Required Cooking Oil/Ghee: To Fry the Poha/Chire
  • 1Cup: 250 ml- Poha (Mentioned Above too)

Steps

45-55 mins.
  1. 1

    Firstly: In a Saucepan-
    Boil the milk & while continuously boiling it reduce it to half of its initial quantity-
    At this point, add in the Bay Leaf & 2 Green Cardamoms- Slit-
    While the milk is boiling: In the interim- We need to gently deep fry the Poha- For that, we’d require to heat up a wok/kadhai over the medium flame & add in sufficient amount of cooking oil/ghee or both together to deep fry the same- It should be deep fried but not at all browned- VVI

    Add in the Milkmaid to it & the sugar (if you’re using it additionally), a pinch of saffron too, if you choose to do so-
    Stir continuously while, at this point it’d tend to get thicker & catch the bottom of the pan easily hence, need to keep a close check on it while stirring as much as is possible- It’s now good time to add in the chopped dry fruits to it & mix everything well together until nicely combined and well incorporated

    Add in the Rose Water too & then, add in the Fried Poha into it now- Give it all a really good mix & cook it for a couple of mins time & bring it to a boil before turning off the flame- Finally, add in the Cardamom Powder- Mix everything well enough to get well combined and nicely incorporated with each ingredients used into it-
    Need to keep it a bit thin while putting off the flame since once it’s cooled down completely it’d get thickened substantially

    This is required to be, for any ‘Kheer’ consistency Transfer it to a separate serving bowl: Garnish it your own way & serve it either Hot or Chilled (keep it in the refrigerator for about a couple of hours time before serving it)-
    Both ways it tastes absolutely Divine & extremely flavourful & delectable-
    ENJOY THIS DUSSHERA WITH THIS UNIQUE SWEET DISH- CHIRE’Aur PAYESH or KHEER POHA
