Ingredients

1-1.5 hours
8-16 servings
  • 1/2 cupcanola oil
  • 1& 3/4 cup sugar
  • 3large eggs
  • 2 cupsgrated zucchini
  • Zest of 1 orange (2 Tbsp)
  • 2& 1/2 cups all-purpose flour
  • 1 tspsalt
  • 1 tspbaking soda
  • 1/2 tspbaking powder
  • 2 tspground cinnamon
  • 3 tspground cardamom
  • 1/2 cupbuttermilk
  • 1 Tbspvanilla

Steps

1-1.5 hours
  1. 1

    Beat the oil, sugar, and eggs on high for 1 minute

  2. 2

    Add the zucchini and orange zest and mix thoroughly

  3. 3

    Mix all dry ingredients in a separate bowl

  4. 4

    Add the dry ingredients into the wet mixture, half at a time and beat on low until well combined.

  5. 5

    Last is to mix in the buttermilk and vanilla

  6. 6

    Divide batter into 2 bread loaf pans, sprayed with cooking spray or baking spray

  7. 7

    Bake at 350 for 1-1.5 hours or until the top is dark golden brown and the center is firm.

    Cool completely before slicing!
