Shave the burdock root and carrots (as if sharpening a pencil with a knife), then set aside. Combine the miso, mirin, and sake, and mix well.

Place the red chili peppers into a sauce pan, heat sesame oil, then sauté the burdock root. When it starts to produce a nice aroma, add the carrots, and sauté until tender. Add the cooked soy beans, coat with oil, add the miso, mirin, and sake, then simmer until the sauce thickens. Sprinkle with sesame seeds to taste.
