Ingredients

  1. 3/4 cupwarm water (180 ml)
  2. 1 1/4 teaspoonsdry yeast (4 grams)
  3. 1 pinchsalt
  4. 1/2 teaspoonsugar
  5. 2 1/4 cupsall-purpose flour (270 grams)
  6. 2 tablespoonsolive oil (for the pan) + extra for drizzling over the spinach
  7. 1 3/4 ouncesroughly chopped spinach (about 50 grams, I buy it pre-chopped)
  8. 4 1/4 ouncesfeta cheese, crumbled (about 120 grams)
  9. Salt and pepper

Cooking Instructions

    Combine all the dough ingredients (water, yeast, salt, sugar) and mix to form a soft, pliable dough. Divide the dough in half, then cut each half into 4 pieces, for a total of 8 pieces.

    Shape each piece into a ball and cover. Let them rest for 20 minutes until slightly risen.

    Roll out each ball with a rolling pin. Add a handful of raw spinach, crumbled feta, salt, pepper, and a little olive oil on top.

    Cover with a second rolled-out piece of dough and seal the edges by pressing the dough inward.

    Brush olive oil in a skillet and cook over medium-high heat for 3 minutes on each side.
