Spinach Pie

This dish is perfect for breakfast, lunch or dinner.
I love spinach. The first time I made this because I was given a bunch of free spinach from a grocery store tossing it out. The amount of flour may be adjusted next time I make it. It may need a little more. I may toss in a few mushrooms next time. If 2 pies are too many, you can freeze one for another time. The spices are optional. I'm Cajun so everything must have some spice!

Preheat oven to 375

Put oil in skillet to brown sausage. Add creole seasoning if desired. Make sure to get it to a fine mince. After it's fairly brown add seasoning blend and garlic. Saute till done.

In a large mixing bowl mix cheeses well. Then add eggs, cream, and other spices and flour. Mix well.

Add meat, veggies and spinach. Mix well. If your spinach is frozen or wet squeeze out access moisture first.

Place mixture in deep dish pie crusts.

Bake at 375 for 30 mins. Remove from oven and top with Mozzarella. Bake an additional 15 mins. Carefully Broil to brown the cheese if desired. Careful not to over brown crust. Allow to cool a little before serving. Enjoy!
