Prepare the noodle sauce: Mix all the seasonings together (except the sesame seeds) and stir until the sugar is fully dissolved.

Lightly toast the seaweed over a flame until crispy, then place it in a plastic bag and crush it into small pieces.

Cook the soba noodles according to package instructions. Rinse them in cold water to remove excess starch.

Toss the soba noodles with the sauce until evenly coated. Sprinkle with the crushed seaweed and sesame seeds.
