Anda Bhujia (Indian-Style Scrambled Eggs)

Add oil to a skillet. Once hot, add the onions and sauté until they turn light golden. Add the green chilies and tomato.

Crack the eggs into a bowl. Add black pepper powder and salt, then beat well.

When the tomato softens, add the beaten eggs and mix well. Cook for 3-4 minutes, stirring, until the mixture looks like scrambled eggs. Add the cilantro and mix well.

After 2 minutes, turn off the heat and serve with paratha, bread, or puri.
